To provide the F&B Team (Service & Kitchen) with the leadership that optimizes F&B profitability whilst delivering great customer experiences and maintaining a high level of engagement.
- Prepare annual F&B business plan to support/ deliver budgeted growth across all F&B income streams
- Ensure that menu and bar pricing is market led, relevant and engineered to deliver optimal profit
- Regularly review product/ process impacts and make changes as required
- Schedule the team to deliver optimal levels of productivity and maintain purchasing cycle in line with forecasted activity
- Ensure that all F&B labour costs are flexed according to levels of demand / activity and that effective cost control is in place
- Interview, select, train, supervise, coach, schedule and evaluate F&B team members (Service & Kitchen)
- Ensure that all F&B team members understand the purpose of their role and are equipped with the training and tools required to deliver great guest experiences
- Be a role model for others in regards to the HGI brand values
- Support the overall management of the hotel by establishing effective working relationships with all other departments, ensuring a high level of cross departmental collaboration
- Prioritise time and energy into areas that add value to the guest experience or profitability of the business (or both)
