İş Tanımı

Responsibilities and essential job functions include but are not limited to the following

 

· To conduct regular site inspections of Food & Beverage outlets and kitchens to ensure our operational colleagues adhere to the rules and regulations required under our local regulatory. xxx licensed requirement based on ‘A’ grading criteria for Food & Beverage and food establishment standard To conduct training for culinary colleagues to create higher level of awareness and communication on Food Safety requirements in Food & Beverage outlets and Kitchen Operations

· To coordinate with third party sampling and maintain microbiological inspection records

· To perform data analysis on microbiological performance standards and communicate the performance and achievement to Kitchen colleagues on their performance standard in maintaining Hygiene standards

· To coordinate and support the Executive Chef, Executive Sous Chefs to ensure high level of food safety management system including HACCP, ISO 22000 food safety management system and standards are compiled in culinary section

· To perform in detail, specific duties to assigned and provide instructions and communication to colleagues in kitchens when necessary for effective completion of tasks assigned relating to Food Safety matter

· To coordinate and ensure proper relevant and applicable records are maintained in accordance to Hotel and ISO procedure relating to culinary section

· To coordinate and support Purchasing Dept. to qualify new suppliers and new vendors and update Halal systems by conducting technical review, assessment and approval on supplier specifications, supplier’s hygiene and food safety standards

· To conduct regular Supplier Audits and Inspections on Suppliers’ Food supplied, whenever applicable

· To communicate food safety issues to colleagues whenever necessary to ensure food safety regulation, standards are complied
